Bloco 1 · Porquê inglês

O inglês é a língua franca da restauração

  • O cliente — turismo, hotéis, cruzeiros: metade da sala pode não falar português. Quem recebe em inglês vende mais e fideliza.
  • A informação técnica — fornecedores, rótulos, fichas de produto, manuais de equipamento e a literatura gastronómica de referência estão em inglês.
  • A carreira — hotéis de cadeia, navios, estrangeiro. É muitas vezes o primeiro filtro de uma candidatura.

Não é preciso inglês "perfeito". É preciso ser claro, correto e cortês.

Dois "inglês", dois registos

  • BOH: "Two steaks, medium, table four!" — funcional e telegráfico.
  • FOH: "Would you like to see the wine list, sir?" — cortês e condicional.

Exemplo — Garlic Butter Shrimp

Serves 4 · prep 10 min · cook 8 min
Ingredients: 500 g shrimp, peeled; 3 tbsp butter; 4 cloves garlic, minced; 1 tsp paprika; juice of 1 lemon; salt and pepper to taste.
Method: Melt the butter. Add the garlic and sauté 1 min. Add the shrimp; cook 3–4 min until pink. Season. Stir in the lemon and parsley. Serve immediately.

  • Particípios na lista: peeled, minced = como preparar.
  • Expressões: to taste, over medium heat, until pink.
  • Conversão: 180 °C ≈ 350 °F · 200 °C ≈ 400 °F.

A regra de ouro da cortesia: modais + please.

Ponto da carne: rare (mal passado) · medium rare · medium (no ponto) · well done (bem passado).

  • UK vs US: bill/check · starter/appetizer · chips/fries · takeaway/takeout.
  • Gorjeta: "Service is not included." / "Tipping is at your discretion."
  • Não-verbal: contacto visual, sorriso, gesto — comunicam quando o inglês falha.
